The short answer
Layers and shoes with grip. The temperature drops a good 10 °C with the altitude, so bring a warm layer even on a hot day in the city. Trainers or hiking shoes with grip matter for wet rocks at Setti Fatma and the paths above Imlil. Add a sun hat, sunscreen and modest cover for village visits.
In more detail
Up at Oukaïmeden on the Three Valleys day it is cold and may be snowy, well into spring. In winter, the upper valleys turn properly cold and you need a real jacket, gloves and a hat.
The sun is strong at altitude even when the air is cool, so sunglasses and SPF are as important as the fleece. A small backpack keeps your hands free for scrambles.
You are visiting villages and family homes, so shoulders and knees covered is the respectful choice. It also helps with the sun.
On the Ourika day you scramble over rocks to the first Setti Fatma fall; above Imlil the track to Aroumd is clear stone. Both are easier in shoes that grip and support the ankle.
